Applesauce Oat Muffins

Applesauce Oat Muffins
4 1/2 cups oats
1 1/4 cup whole wheat pastry flour
1 1/4 cup white flour
1 1/2 cup brown sugar
1 Tbsp baking powder
2 1/4 tsp baking soda AND cinnamon
1 1/2 tsp salt
3 cups applesauce
9 Tbsp melted butter or vegetable oil
3 eggs

Topping:
1 cup oats
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 cup melted butter
Blend all together and top muffins before cooking

For muffins: Preheat oven to 400. Combine all dry ingredients. Add wet ingredients and mix just until moistened. Fill paper lined muffin tins 3/4 of the way full. Top with topping mixture. Bake at 400 degrees for 16-18 minutes.

Yield about 3 dozen
