Primal Vanilla Pancakes

These are from The Food Lover's Primal Palate. SO good!   Keep the heat lower than you would with flour pancakes.


Primal Vanilla Pancakes


1 cup coconut flour
16 eggs
1/4 cup water
1/4 cup vanilla extract
1 tsp baking soda
1/4 tsp salt


Blend all ingredients EXCEPT coconut flour in a large bowl with a hand mixer. Eggs should be frothy.  Add the coconut flour and mix till well blended and smooth. Let stand a minute to thicken. Adjust consistency with additional water or flour as you prefer. Cook on a well buttered pan (seasoned cast iron is perfect!) till done.

That is a serious amount of eggs! How many pancakes does this yield? Are they more crepe like than cake like?

This makes 16 4" pancakes. I made them this morning as a matter of fact, so I am positive of the count! It was enough for all 9 of us (mom, three teens and five younger than 11) to be satisfied. They are really quite filling.

OOOps....I meant the five are 12 and under, not 11. My mistake! As for texture, they are fluffy, but denser and heavier then wheat pancakes. They are not eggy at all. I tried several variations of coconut flour pancakes before finding this one. Others were somewhat eggy in texture and thin and crispy rather than fluffy.
