Zucchini Hummus

This is sure to appear on my table often throughout the summer. I found it at The Culinary Life.

Zucchini Hummus

2 zucchini, peeled and chopped
1/2 cup raw tahini
1/3 cup fresh lime or lemon juice
1/4 cup cold pressed olive oil or flax seed oil
4 cloves garlic, minced
1 teaspoon celtic sea salt
1/2 tablespoon ground cumin

Blend ingredients in a high speed blender until smooth, adding more salt and lemon juice to taste if you like.

  1. I was reading your zucchini hummus post and wondered how you organize your recipes? I love this one but would never find it come abundant zucchini season!! :)

  2. Angi, if you look to the right, there's a catalog of topics. I try to organize the recipes by main ingredient or use. I have a category for zucchini all to itself! I love it!
