Migas Con Huevos
5 corn tortillas, torn or cut into small bits
10 eggs, lightly beaten
10 Tbsp (or more, to taste) tomato sauce or salsa
2 1/2 Tbsp minced onions
oil (red palm, if you have it)
salt
1 cup shredded cheese
Begin frying tortilla bits in hot oil. Just before they are crispy, stir in onions. Cook and stir a few minutes, till onions are translucent. Drain excess oil. Add eggs, tomato sauce, cheese, and salt to taste.
Scramble eggs until done. Serve hot.
