I love a good slaw during the summer! This one is from Martha Storey's cookbook.
Zucchini Slaw
1 medium zucchini, grated
1 medium carrot, grated
1 stalk of celery, chopped
1/2 medium green bell pepper, chopped
1/2 head of cabbage, green or red, grated
1/3 cup olive oil or homemade mayo
2 Tbsp lemon juice
1 tsp mustard, dijon or yellow
salt and freshly ground black pepper to taste
Toss veggies in a bowl. Combine oil, lemon juice, mustard and spices. Pour over veggies and stir to coat. Refrigerate at least 1 hour before serving.
