French Bread Rolls
French Bread Rolls
3 cups warm water (110 degrees)
2 Tbsp yeast (SAF surpasses ALL others!)
4 Tbsp sugar
4 Tbsp olive oil (I use Bragg's exclusively)
1 Tbsp salt
8 cups bread flour
In your mixer bowl, proof the yeast with the sugar and water, for about 10 minutes.
Add oil, salt and 2 cups of flour. Mix, then add remaining flour. Knead for 4 minutes. Turn out dough into a large greased bowl. Cover and let rise for one hour or until doubled in size. Punch down. Form into rolls or loaves. Let rise for 40 minutes or until nicely poofed. Bake at 400 degrees for 18-20 minutes for rolls, 25 or so for loaves.
Makes 36 rolls or 4 loaves. I often use half the dough for rolls and half for loaves. This bread does not store well and is much better the day it is baked, so consider halving the recipe if you don't have a large crew to feed!

Herbed Batter Bread
- Combine 6 cups flour, salt, sugar, and yeast in a large bowl. Stir in the water, olive oil, parsley, rosemary, and thyme. Use an electric mixer to beat on low speed for 1 minute, scraping bowl frequently. Turn mixer to medium, and beat for an additional 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour; mix until smooth. Scrape batter from sides of bowl. Cover, and let rise in warm place for 35 to 40 minutes.
- Grease three 9x5 loaf pans. Stir down batter by beating about 25 strokes. Scrape batter into greased pans; pat down with floured hands. Cover pans. Let dough rise in warm place until doubled, about 30 minutes. Do not allow dough to over-rise.
- Preheat oven to 375 degrees.
- Bake in preheated oven until the loaves sounds hollow when tapped on the bottom, 40 to 45 minutes. Spread butter over the top of hot bread. Remove from pan and cool a bit before devouring.

Amish Cinnamon Bread
AMISH CINNAMON BREAD
Batter:
2 cups butter, softened
4 cups sugar (I use much less)
4 eggs
4 cups buttermilk or 4 cups milk plus 1/4 cup vinegar or lemon juice
8 cups flour
4 teaspoons baking soda
Cinnamon/sugar mixture:
1 1/3 cups sugar
4 teaspoons cinnamon
Cream together butter, 4 cups of sugar, and eggs. Add milk, flour, and baking soda. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan). Mix in separate bowl the sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan. Add remaining batter to pans; sprinkle with last of cinnamon topping. Swirl with a knife. Bake at 350 degrees for 45-50 min. or until toothpick tester come clean.
Cool in pan for 20 minutes before removing from pan. Yield 4 loaves

Hawaiian Rolls
Hawaiian Rolls
3 cups warm water
2 eggs, beaten
2 tsp kosher salt
2 tsp vanilla extract
2 tsp almond extract
1/4 cup honey
1/4 cup white sugar
1/4 cup butter
9 cups bread flour
4 tsp yeast
In mixing bowl, with dough hook attached, proof together water, yeast and white sugar for about 10 minutes.
Add in remaining ingredients, except flour. Mix well.
Add flour all at once, and turn on. After dough has formed, add a slight bit more flour, if needed, to keep dough from sticking. Knead for four minutes.
Turn out and allow dough to rest five minutes.
Form rolls and place in greased 9x13's or on baking sheets.
If freezing rolls, they go into the freezer now for a few hours, then into a zippy bag for storage. To use, place dough balls in greased 9x13 or on a baking sheet and allow to thaw and rise for up to eight hours. Then bake as directed for unfrozen rolls.
Let rolls rise until double.
Bake at 350 for 17 minutes.
Yield: about 4 dozen

LEMON ICING
1 cup(s) POWDERED SUGAR; Plus 1 Tablespoon.
2 tablespoon(s) WHOLE MILK; I Used 2%.
1/2 teaspoon(s) LEMON EXTRACT
Instructions
Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.
Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.
Yield is 1 loaf

Georgia Peach Bread
3 cups sugar
1 cup butter, room temperature
4 eggs
4 1/2 cups pureed peaches
4 cups flour
2 tsp cinnamon
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tsp vanilla or almond extract
up to 2 cups finely chopped almonds or pecans, optional
Cream sugar and butter. Add eggs and mix well. Add peach puree and mix well again. Add dry ingredients, then add extract and nuts, if you wish. Pour into loaf pans or 2 9x13's that have been well greased and floured. Bake at 325 for 55-60 minutes for bread or 30-40 minutes for 9x13's. Check and do the toothpick test. Cook until done. Let cool for five minutes, then remove bread from pans. Let bread or the 9x13's cool on a cooling rack until cold. Wrap bread or cover 9x13's and store until the next day. Bread will freeze well for two months.
Yield 4 loaves or 2 9x13 pans

Irish Soda Bread
Irish Soda Bread
4 C flour (white, wheat or a combination)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 T sugar
2 C buttermilk (preferably room temperature)
Preheat oven to 375°
Sift (or not) the flour, soda, baking powder and salt into a large bowl. Add sugar. Stir with a fork. Add buttermilk (I use regular milk with a bit (splash) of lemon juice or vinegar added or even powdered milk mixed with warm water and a little vinegar or lemon juice) and stir until it forms a ball. Turn onto a lightly floured surface and knead for 2 minutes (do not knead for more than 2 minutes - it will make the bread tough).
Form dough into a ball and place in a well-buttered 8" cast iron skillet (if you don't have cast iron, you can use a cake or pie pan). Press down slightly and cut a cross in the top of the loaf.
Bake at 375° (or a medium/hot wood cook stove oven) for 35-40 minutes. (This bread does not require time to rise).

Almond Flax Bread
1/4 cup ground flax seeds
1 tbsp whole flax seeds
1/2 tsp unrefined sea salt
1/2 tsp baking soda
4 eggs beaten
2 tsp honey, optional
1/2 tsp raw cider vinegar
butter, to grease a loaf pan
- Preheat the oven to 300°.
- Grease a loaf pan.
- Mix all ingredients together until thoroughly combined, then pour into a greased loaf pan and bake at 300° for 45 minutes, or until a toothpick inserted into the bread’s center comes out clean.
- Cool completely before serving.

6 cups almond flour
2 tsp baking soda
1 tsp EACH sea salt and baking powder
6 eggs
4-6 overripe bananas
1 cup honey
1/2 cup melted coconut oil or butter
2 tsp vanilla
1/2 cup nuts, if desired
Preheat oven to 350 degrees. Grease muffin tins. Blend dry ingredients together. Mix wet ingredients in a smaller bowl. Add wets to drys and stir to combine. Pour into prepared muffin pans. Sprinkle with nuts, if desired. Bake about 20 minutes.

Primal Cheesy Garlic Quick Bread
Preheat the oven to 350 degrees.
Blend all ingredients except cheese with whisk until there are no lumps. If the batter is a little dry just add a tablespoon of water as needed. It should be a pretty moist, almost pourable batter. Stir in cheese. Pour into greased bread pan.
Bake in preheated oven for 40 minutes or until done (toothpick inserted in center comes out clean).

Italian Herb Bread
3 Tbsp yeast
6 cups water
6 Tbsp sugar
3 Tbsp salt
3/4 cup olive oil
1 1/2 tsp basil AND oregano
3/4 tsp garlic AND onion powders
1 1/2 cups Parmesan cheese
18 cups of AP flour
Sponge yeast, sugar and water together till foamy. Add salt, oil. spices, cheese and 6 cups flour. Combine. When combined, add remaining flour as mixer is working. Knead 4-5 minutes. Form into loaves and put in greased loaf pans. Let rise till double, about 20 minutes at 100 degrees, longer on the counter top. Bake at 325 in convection oven for 30 minutes. In a standard oven. bake at 350 for 40-45 minutes.

Patrice's English Muffins
ENGLISH MUFFINS
5 1/4 to 5 1/2 cups flour
4 1/2 tsp active dry yeast
2 cups milk
1/2 cup butter
2 tablespoons sugar
1 teaspoon salt
Cornmeal
In a mixing bowl, combine 2 cups of the flour and the yeast. In a saucepan, heat and stir milk, butter, sugar, and salt until warm (120-130F) until the butter almost melts. Add to flour mixture. Beat with a mixer on low speed for three minutes. Using a spoon, stir in as much of the remaining flour as you can.
Turn out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes). Shape into a ball. Place in a greased bowl; turn once to grease surface. Cover and let rise in a warm place until double (about one hour).
Punch dough down. Turn out onto a lightly floured surface. Cover and let rest ten minutes. Roll dough to slightly less than 1/2 inch thick. Cut with a 4-inch round cutter, rerolling scraps. Lightly brush muffins with water and dip both sides into cornmeal. Cover, let rise in a warm place until very light (about 30 minutes).
Cook muffins in an ungreased pan or griddle on low temp for 30 minutes, turning every 5 minutes. Yield: about 18 muffins.

Gluten-Free Cheesy Biscuits
2/3 cup butter, plus a little more for the pan
12 eggs
1 cup coconut flour
1 tsp salt
2 tsp baking powder
2 tsp baking soda
2 cups cheddar or Colby Jack cheese, shredded
1/4 cup chives
Melt butter, stir in eggs.
Add coconut flour, chives, salt, baking powder and baking soda.
Stir in cheese.
Grease a cookie sheet. I like to use coconut oil, the original post calls for more butter. Drop large spoonfuls onto the cookie sheet.
Bake at 350 for 12-15 minutes, depending on the size of the biscuits. Use the toothpick test to see if they are finished. You can also melt a little more cheese on top of them, if you would like. This should make about 2 dozen biscuits depending on size.

Basic Grain-Free Bread
• 1 cup coconut flour, sifted
• 1 cup flax seeds, ground and sifted (I'll discard the hulls that wouldn’t sift through)
• 1 teaspoon salt
• 2 teaspoons baking soda
• 10 eggs
• 1/2 cup coconut oil, melted
• 1/3 cup plain full-fat yogurt (optional)
• 1 Tablespoon apple cider vinegar
Preheat your oven to 325 degrees Fahrenheit.
Mix together flour, flax, salt, and baking soda.
In a separate bowl, whisk together eggs, coconut oil, yogurt, and vinegar.
Pour the dry ingredients into the wet ingredients, mixing after each addition
Pour into a greased loaf pan, and bake 50-70 minutes, depending on size of loaf pan.
Cool 10 minutes in the pan, then turn out onto a cutting board. Allow to cool completely before slicing.
18-22 slices

2 cups whole wheat pastry flour
2 cups all purpose flour
2 Tbsp yeast
Mix and proof.
Combine in saucepan:
1 cup milk
3/4 cup water
1/2 cup oil

Bring just to warm and combined.
Add wet to dry ingredients,. Knead briefly. Let rise 10-15 minutes. Knead a few times. Form into buns. Rise. Bake at 350 for 15-20 minutes.

Basic Homemade Flour Tortillas
4 cups flour
2 tsp salt
1 cup water
1/2 cup oil
Sift flour and salt together. Add water and oil, stirring well till combined. Knead until smooth. Divide into 16 pieces, cover and let rest 10 minutes. Roll out thin or use a tortilla press. Cook on a hot skillet 30-60 seconds on each side.

1 cup whole wheat flour
3/4 cups oat flour
1/4 cup milled flax seed
1 Tbsp wheat germ
1 tsp baking powder
1/2 tsp salt
Combine all dry ingredients in bowl. Set aside
1 egg
2 cups cooked, cooled, mashed sweet potatoes
1/2 cup honey
1/4 cup applesauce
1 Tbsp lemon juice
1/2 tsp vanilla
1 cup chocolate chips
1 tsp cinnamon
1/2 tsp nutmeg
Combine all wet ingredients except chocolate chips.
Add dry to wet and combine just until moistened. Fold in chocolate chips.
Bake at 325; Muffins 12-15 minutes, loaf 55-60 minutes.

Italian Pizza Dough
Italian Pizza Dough
10 cups bread flour (will not work with AP flour)
4 tsp salt
4 tsp sugar
1 Tbsp yeast
1 Tbsp Italian seasoning
1 tsp garlic powder
4 cups warm water
1/4 cup olive oil
In your mixer bowl with dough hook, combine first 6 ingredients, mix well. Add liquid ingredients and, once dough is combined, allow to knead 4-5 minutes. Let rest, covered, for 20 minutes (can be skipped if in a great hurry). Form into pizzas. Top as desired. This makes three large, thin pizzas or two thick ones.

Oat Dinner Rolls
5 cups water (divided)
2 cups oats, freshly rolled, if possible
1 1/3 cup brown sugar
6 Tbsp butter
3 tsp salt
1/4 cup yeast
10-12 cups flour
Boil 4 cups of water. Stir in oats and simmer. Add sugar, butter, salt and rest of water. Cool.
Stir in yeast - let sponge.
Add flour, 1 cup at a time. Put dough in lightly greased bowl. Cover with a towel and let rise in a warm place. Punch down, let rise until almost double. Punch down again. Shape into rolls. Let rise until almost double.
Bake for 15-20 minutes at 350 degrees.

The Hillbilly Housewife's Garlic Breadsticks.
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 tablespoon dry Italian seasoning
- 1 tablespoon baking powder
- 1 cup milk
- 1/2 cup butter
- 1 more teaspoon garlic powder
- 1/2 teaspoon salt
- Parmesan cheese (optional)
Measure flour, salt, garlic powder, parsley and baking powder into mixture bowl equipped with dough hook. Stir well. Pour in milk. Mix until you get a ball of dough that leaves the sides of the bowl. Dust the ball of dough with a little flour if it seems sticky. Knead the ball of dough for 30 seconds. Now place your dough on the counter. You may place a sheet of waxed paper under it you like. Using a rolling pin or sturdy bottle roll the dough out into a rectangle shape. Use your hands to press the edges smooth. You are aiming for a rectangle that will fit into a 9 by 13-inch pan. When you get the dough the right size, set it aside.
Meanwhile place the butter in a 9 by 13-inch pan. Place the pan in the oven at 425°. Allow the pan to preheat and the butter to melt. When the butter is melted, carefully remove the pan from the oven. Sprinkle the second teaspoon of garlic powder, the 1/2-teaspoon of salt and the optional Parmesan cheese evenly into the pan.
Now, very carefully lay your rectangle of dough into the pan, over top of the butter. Next cut the rectangle into narrow strips. The butter will creep up between the strips. This is normal. It is what gives these bread sticks their texture. After cutting your strips, place the pan in the oven, still at 425°, and bake them for 20 minutes. They will be brown and crispy when they are done.
