Dirty Keto Cajun Rice

Dirty Keto Cajun Rice


2 green bell peppers, diced 

2 yellow onions, diced 

2 celery stalks with leaves, diced 

3-4 cloves garlic, minced 

2 Tbls of avocado oil 

1 lb ground pork 

About 1/4 cup chicken stock

1 head cauliflower, riced

2 Tbls fresh parsley, chopped

1/2 Tbls paprika 

1/2 Tbls garlic powder 

1/2 tsp dried oregano

1/2 tsp dried thyme 

1/2 tsp dried basil 

1 Tbls Redmond’s real salt 

1/2 tsp white pepper 

Sliced green onions  

2 lbs shrimp 

A pack smoked sausage 


Optional heat:

Add diced jalapeño to veggie sauté 

Sprinkle crushed red pepper after plated 


Sauté peppers, onions, celery, and garlic in the avocado oil over med/high heat. Once it’s done to your liking add the ground pork and all spices, including fresh parsley, cook until the pork is done. Add the chicken stock to deglaze pan. Add the cauliflower and mix it all up then put the lid on and let it cook until ready, stirring occasionally. While the caulirice is cooking, cook the sausage up in another pan and the shrimp, to your liking, in another one. Shrimp was seasoned with old bay seasoning, smoked paprika, Redmond’s garlic salt, and butter. When everything is done, mix it all together, top with green onions, and enjoy!

Lasagna Casserole

I found this at Food.com, like many of the other meals we love! I also baked a spaghetti squash and made a smaller serving on the side for the gluten-free members of our family. It was just as good (better, imo) as the pasta version!

Lasagna Casserole

  • 1 lb ground beef, uncooked1 lb Italian sausage, hot or mild
  • 1/4 cup onions, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (16 ounce) packages pasta shells, cooked
  • 6 cups mozzarella cheese
    • 24 ounces cottage cheese
    • 2 eggs
    • 1/3 cup parmesan cheese
    • 2 tablespoons parsley
    • 2 quarts spaghetti sauce
      Cook beef and sausage with onion, salt and half of the pepper. Add spaghetti sauce and store together.In bowl, combine 3 cups mozzarella cheese, cottage cheese, beaten eggs, parmesan cheese, parsley, remaining pepper and cooked pasta.Divide pasta mixture into two greased 9x13's, top with meat sauce. Sprinkle with remaining mozzarella cheese. Bake, uncovered, at 350 for 30 minutes or until hot.

Cher's Breakfast Casserole

This is a recipe from a facebook group. I'm looking forward to this! I love making things in the evening and cooking them in the morning for an easy beginning of the day.
Cher's Breakfast Casserole
1 lb ground sausage
3-4 cups shredded cheddar cheese
1 large pepper, green, red or yellow
1/2 lb of ham chopped
1/2 med white onion ( chopped )
6-8 slices of Crisp Bacon chopped
16 eggs
1 cups heavy whipping cream
Preheat oven to 350 degrees F.
Grease 13 x 9 x 2 inch pan or dish with bacon grease, olive oil or coconut oil.

1. Cook ground sausage until done ( drain ).
2. Layer shredded cheese evenly. Layer sausage atop the cheese.
3. Layer the green, red, or yellow chopped pepper next.
4. Layer the ham next.
5. Layer the chopped onion next.
6. Layer the chopped cooked - bacon next.
7. Beat 16 eggs with 1 quart of heavy whipping cream and pour over the top of
the onions.
Bake 350 degrees F. 55-60 min. Sides and top should be golden brown.
Take out set on wire rack. Serve warm.
This can be prepared the night before. Cover with foil and set in the
refrigerator. The next morning set in oven uncovered, set oven to 350 add 10 min to cooking
time. Serve warm.

Breakfast Bake

This recipe is from Large Family Logistics. I think it will go over well here. It didn't say what to bake it in or the temperature, but I assume it would be a 9x13 and I will be trying 300 degrees, if no one else advises differently. I will be doubling it and using 2 9x13's.

Breakfast Bake

Shred a few potatoes with your food processor
4 T butter, melted
8 eggs
½ c milk
2 c Jack or Cheddar shredded
1 c cooked ham, sausage, or hamburger

Beat eggs; add milk, ½ t salt, ¼ t pepper.
Mix in potatoes.
Add meat, chives, and cheese. Stir.
Bake until eggs are set.

Baked Egg Omelet

I made this, doubled, for breakfast today. It's really good and very easy. I entered it (then copied it here) into my livestrong account and found that one serving has just 202 calories. I found the original recipe from Taste of Home.

Baked Egg Omelet

6 eggs
1 cup whole milk
1/2 cup All Purpose Flour
1 tsp Kosher Salt
1/4 tsp Pepper, Black
1 cup Shredded Medium Cheddar Cheese

Place eggs and milk in the blender. Add flour, salt and pepper. Cover, process until smooth. Pour into greased 9x13. Bake at 400 for 20 minutes, until eggs are set. Sprinkle with cheese. Roll up omelet in pan, starting with a short side. Place seam side down on serving platter and cut into 1" slices. You can also add cooked bacon or sausage and veggies if you want.

Chicken Chimichangas

Chicken Chimichangas

1 pound pinto beans, cooked with salt, soaked overnight,and prepared earlier

Cooked chicken (enough to feed your family; I used two family packages of marked down "sell by today" chicken legs, boiled with some salt and pepper and a bay leaf or two for a couple of hours, then picked off the bone)

Chopped onion or green onions to taste (we used 1/2 an onion)

2-3 cloves garlic, crushed, to taste (we used 2 cloves)

Saute the above in oil until veggies are limp.

Add:

8 oz homecanned Salsa

1-2 tsp. oregano

1/4 -1/2 tsp. cumin

You could add olives, too, if you wish.

Grease a 9X13 (I used a 9X13 and a 10X15). Put a scoopful of the above mix into a flour tortilla, add a scoop of the beans, and a sprinkle of cheese. Wrap up, and place seam side down in the greased pan. Brush with melted butter and bake at 375 for 15 minutes. Then broil for a few seconds to brown them up. Wonderful!

Beef Noodle Casserole

Beef Noodle Casserole

1 1/2 pounds hamburger, cooked, seasoned with pepper
1 1/2 pounds of egg noodles, or other shaped noodles, cooked and drained
a quadruple serving of Cream of... (made with red palm oil, if you can)
1 16 oz bag of frozen corn
8 oz (or more) shredded cheddar cheese (Tillamook brand, if possible!)

Mix the noodles, hamburger, Cream of, and corn well. Put into an ungreased 11 X 15 or 2 9 X 13's. Top generously with cheese. Bake at 350 for 10-20 minutes, until cheese is melted and as crisp as you like.

Large Family Breakfast Casserole

Large Family Breakfast Casserole
2 pounds sausage
8 cups bread, cut into pieces
4 cups cheddar cheese, shredded
20 eggs, beaten
8 cups milk
2 tsp dry mustard
1 tsp onion powder, garlic powder

Cook crumbled sausage until done, drain. Thickly butter two 9x13 pans. Add bread. Sprinkle with cheese. Combine milk, eggs, and spices. Pour over bread and cheese. Sprinkle evenly with sausage. Cover and chill overnight. Preheat oven to 325, and bake casseroles uncovered for 1 hour.

Scalloped Potatoes and Beef

This casserole goes over well with my family. It's best prepared well ahead of time so you have plenty of time for the long bake it requires.

Scalloped Potatoes and Beef
1 1/2 pounds ground beef
1 small onion
a small green pepper
2 Tbsp freshly chopped garlic
1/2 tsp red pepper flakes
1 tsp salt OR seasoned salt
1 tsp pepper

6-8 large baking potatoes, peeled and sliced thinly

Cook beef with onion, garlic, green pepper, salt, pepper and chili flakes. Cook until meat is browned. Drain if needed.

Sauce
1 recipe Cream of...soup, quadrupled (4x)
1/2 cup milk
1 cup sour cream or plain yogurt
1/2 cup grated Parmesan cheese
2 tsp garlic powder
2 tsp seasoned salt
black pepper to taste
2-2 1/2 cups grated cheese

Combine all sauce ingredients except cheese and stir until well combined.

In two greased 9x13's, begin layering potatoes, then sauce then a bit of cheese. Repeat until pans are full. Do not top with cheese yet. Cover with foil. Bake at 350 for 1 hour, then uncover and bake 30 more minutes. Remove from oven and sprinkle with remaining cheese. Bake for 5 more minutes. Allow to set for 10 minutes before serving.
