Sloppy Joes for Canning

This is a very tasty recipe!


4 pounds ground beef

3 cups chopped onion

1 1/2 cups bell pepper

2 cups tomato sauce

2 cups ketchup

2 cups water

1 tbsp salt

1 tbsp sugar

1 tbsp prepared mustard

1 tsp pepper 


Chop all veggies to preferred size. Cook beef till done.  Add all ingredients together and bring to simmer. Cook five minutes.  Prepare 8 pints jars and fill, 1.5” headspace, and pressure can for 75 minutes.

Taco Soup for Canning

Taco Soup for Canning

Yield 7 quarts, plus a little for lunch

1 dry cup each of pinto beans, red beans, Peruano beans, and black beans, soaked overnight and rinsed, or boiled and soaked for one hour,, and drained and rinsed. 

3 pounds ground beef, cooked and rinsed

Mix together:

2 green bell peppers, diced
1 yellow onion, diced small
6 Tbsp taco seasoning
32 oz tomato sauce
28 oz canned diced tomatoes
2 Tbsp black pepper
1 Tbsp salt

32 oz frozen corn

2 cups water or broth

In each jar, layer meat, tomato/spice/veggie mixture, corn until almost 3/4 full.  Add broth until 1.5” headspace.  Clean rims, add lids and rings. Pressure can at 10# pressure for 90 minutes.  




Monkey Jam

3/4 cup sugar
1 cup water
6 Tbsp lemon juice
3 1/2 cups mashed bananas
1/8 tsp ground cloves 
1/8 tsp nutmeg
1/4 tsp cinnamon
2 tsp calcium water
2 tsp Pomona pectin

Mix pectin in sugar and set aside.

Mix together and bring all other ingredients to a boil.  Whisk in sugar and pectin mixture. Taste for sweetness and add more sugar if desired.  Do a frozen plate test.  If the jam sets, then add jam into prepared jams and do a water bath for 10 minutes. 



Cranana Jam

Cranana Jam

3 cups cranberries
1 1/2 cup water
2 cups mashed bananas
1 tsp lemon juice
1 cup sugar
2 tsp Pomona pectin 
2 tsp calcium water

Mix pectin into the sugar. Set aside.

Bring cranberries, bananas, water, lemon juice and calcium water all to a boil. Whisk in the sugar and pectin.  Bring back to a boil. Taste for sweetness and add sugar if desired.  Do the frozen plate test.  If it sets, pour into prepared jars, add lids and rings, and water bath can for 10 minutes.

Forum BBQ Sauce

Trying this BBQ sauce found on an old forum. Will BWB for 15 minutes.

Becker's Best BBQ Sauce :

Ingredients

2 cups ketchup
2 cups tomato sauce
1 1/4 cups brown sugar
1 1/4 cups red wine vinegar
1/2 cup unsulfured molasses
4 teaspoons hickory-flavored liquid smoke
2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon celery seed
1/4 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon coarsely ground black pepper

Directions

In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.

Tomato Soup

This tomato soup is so rich and has layers of flavor. Try it! It’s so much better than opening a can. 

Tomato Soup

2 Tbsp oil
1 cup chopped onion
4 cloves garlic, minced
1 cup chopped carrot
1/2 cup chopped celery
56 oz. canned tomatoes (or 8 fresh tomatoes diced and seeded)
7 cups chicken broth
2 Tbsp. Worcestershire sauce 
2 tsp salt
1 tsp thyme
1 tsp pepper
8 drop Tabasco

Sauté garlic and onion in the oil u til tender. Add carrot and celery and cook 7-9 minutes. Stir in remaining ingredients.  Cook and bring nearly to a boil.  Cover and simmer 20 minutes, stirring frequently.  Use immersion blender to make a smooth soup, or leave chunky, if desired.

Soft Oatmeal Raisin Cookies





Soft Oatmeal Raisin Cookies


1 1/2 cups butter, softened
1 1/2 cups white sugar
1 1/2 cups packed brown sugar
3 eggs
1 1/2 teaspoons vanilla extract
3 cups all purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1/2 tsp ground cloves
4 1/2 cups rolled oats
1 cup raisins

In a bowl, cream together butter and both sugars. Beat in eggs, one at a time, then stir in vanilla.
Combine flour, baking soda, salt, cinnamon and cloves.  Stir into the creamed mixture.  Mix in oats.
Cover and chill dough for one hour.  Do t skip this step!

Preheat oven to 375. Spoon out dough and flatten with a sugared fork (I don’t do this, but the original recipe called for it.)

Bake 10 minutes, cool a bit, then transfer to a cooling rack.

Makes about 3 dozen, depending on how big you make the cookies.
