Nightshade Free Taco Seasoning

My husband has been less able to tolerate nightshades as time goes on.  Here's a nightshade-free taco seasoning that he liked.  Tostadas are back on the menu! 

Nightshade Free Taco Seasoning

1 tbsp pink Himalayan salt, ground fine
½ tbsp onion powder
½ tbsp garlic powder
1 tbsp cumin
1 tbsp parsley
1 tbsp oregano

Mix all spices and use as desired.  I used one tbsp of mixture to a pound of ground beef.

Homemade Breakfast Sausage Spices

I used this recipe to season 15 pounds of ground pork today. I found it at Food Renegade.

Homemade Breakfast Sausage Spices

2 tbsp of dried sage
1 tbsp + 1 tsp of salt
2 tsp ground black pepper
1 tsp dried marjoram
1/4 tsp crushed red pepper flakes
2 pinches ground cloves
4 lbs of ground pork


Mix spices thoroughly through ground meat. Form into patties, if desired and freeze. I just pack evenly and flat in a zippy bag. It thaws so easily in a sink of warm water.

Homemade “Emeril’s Essence”  Seasoning Blend


I saw this on Canning Granny's blog.


Yield: 1/3 cup

Ingredients

* 1 tbsp paprika

* 1 tbsp sea salt

* 1 tbsp garlic powder

* 1-1/2 tsp onion powder

* 1-1/2 tsp dried oregano

* 1-1/2 tsp dried thyme

* 1 tsp freshly ground black pepper

* 1 tsp cayenne pepper (if you like it spicy, use more)

Instructions

1. In a small bowl, add all of the above ingredients and mix well to combine. (I use the back of spoon to mash/grind the ingredients together.) 

2. Transfer to a 4-ounce mason jar or clean recycled spice jar.

3. This seasoning mix is not only a great accent for meats, poultry and seafood, but is also delicious on grilled or roasted veggies! (If you're interested in Emeril's original recipe, you can find it at Emeril Lagasse's website.)

Tritip Rub

Tritip Rub

Makes 1 cup

2 T garlic granules
2 T kosher salt
2 T fresh ground black pepper
2 T chili powder
1 T brown sugar (optional)
1 T cumin
1 T dried parsley
1/2 tsp onion powder

Mix well. Store in a glass jar. Use to rub over tritip and other meats before grilling.

Homemade Creamsicle Popsicles

This recipe came through on my facebook wall.  I make a smoothie similar to this, but not exact.  My kids, and the neighborhood kids, LOVE homemade popsicles on a hot day.

Homemade Orange Creamsicles

1 cup orange juice (fresh or frozen), 1 cup heavy cream, 3 TSP honey, 1/4 tsp orange extract, 1/2 tsp vanilla extract Whisk all ingredients together. Pour mixture into popsicle molds. Let set for 30-60 minutes, then add popsicle sticks. Freeze for another 4-6 hours or until frozen. When ready to serve, run warm water along popsicle mold to loosen the popsicles.

2 Tablespoons basil
1 Tablespoon white pepper
1 Tablespoon freshly ground black pepper
1 Tablespoon thyme
1 Tablespoon cayenne pepper

Bulk Taco Seasoning

This is a newer, spicier, less-oniony version of taco seasoning.


1/2 cup + 2 Tbsp chili powder
2 1/2 tsp EACH garlic and onion powder, dried oregano and red pepper flakes
1 Tbsp + 2 tsp paprika
1/4 cup + 1 Tbsp cumin
3 Tbsp + 1 tsp sea salt AND black pepper


Mix well.  Use 1-2 Tbsp per 1 pound ground beef, as desired.

Herbed Pepper Rub

I found this at allrecipes.com. There, it was used on a pork loin and that's how I used it the first time. It's also good on other meats.

Herbed Pepper Rub

2 Tbsp freshly cracked black pepper
2 Tbsp freshly grated Parmesan cheese
2 tsp basil
2 tsp rosemary
2 tsp thyme
1/4 tsp garlic powder
1/4 tsp salt

Combine and rub generously on meat. Cook as desired.

Homemade Worcestershire Sauce

I found this on a facebook group's page. I haven't tried it yet, but it sure would fill a hole in my seasonings. Now I use coconut aminos to sub for Worcestershire and it works, but the taste isn't exactly the same.

Worcestershire Sauce

(1 inch) fresh Ginger, bruised

2 cloves Garlic, bruised, (not even necessary to peel, just toss them in)

6 teaspoon whole Cloves

4-3/4 cups Vinegar

1/4 teaspoon Cayenne pepper

1 teaspoon Salt

2 cups molasses

Optional: Use 2 Tablespoons of the oil off a can of Anchovies for flavor, but it’s not necessary, will taste just as good without.

Place all ingredients in a large saucepan; stir to combine. Cover and bring to a boil. Simmer for 20 minutes. Remove from heat and let stand overnight.

Next day; strain into bottles and seal tight. Store.

***Can be used straight away, but does improve with age.

Homemade Poultry Seasoning

I needed poultry seasoning while I was making dinner tonight, and my jar was empty! Off I went to Food.com (which used to be called Recipezaar) for help. They gave me this recipe, which worked wonderfully. Hooray for homemade seasoning blends!

Homemade Poultry Seasoning

Blend together:

2 teaspoons ground sage

1 1/2 teaspoons ground thyme
1 teaspoon ground marjoram
3/4 teaspoon ground rosemary
1/2 teaspoon nutmeg
1/2 teaspoon finely ground black pepper

Sausage Seasoning

Here's another homemade sausage seasoning. I bought a 25 pound pork butt roast that is going to supply our Italian sausage for the next few months.

Sausage Seasoning

1 1/2 teaspoons salt
3 1/2 teaspoons paprika
2/3 teaspoon garlic granules or 2/3 teaspoon garlic powder
1/3 teaspoon fennel seed
1 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes

Mix into 1 pound ground pork, turkey, beef, etc. Multiply recipe as desired.

Healthy Homemade Mayo

Healthy Homemade Mayo

4 egg yolks, room temperture
1 Tbsp lemon juice or ACV
1 tsp mustard or 1/2 tsp dry mustard
salt and pepper
2/3 cup olive oil
2/3 cup coconut or macadamia oil

Put egg yolks into blender and blend till smooth.

Add lemon juice or ACV, mustard and spices. Blend.

SLOWLY drizzle in olive oil, while blending on slow speed. Start with just a drop at a time..Be SLOW! Add remaining oil. Store in refrigerator for up to a week.

Homemade Breakfast Sausage Spice Mix

I made and froze 10 pounds of pork sausage using this mix.

Homemade Sausage Spice Mix

Use 3 Tbsp per pound of ground meat. Mix well and let seasoned meat sit 15 minutes to an hour before cooking.

1 1/2 tsp salt
3 1/2 tsp paprika
2/3 tsp garlic powder
1/3 tsp fennel
1 tsp freshly ground black pepper
1/4 tsp sage
1/4 tsp thyme
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes

Coating Mix for Meats

This breading mix can be used on a variety of meats. You can alter any of the spices to your liking, as well.

Coating Mix For Meats

2 cups dry bread crumbs
1 1/2 tsp salt
1 1/2 tsp paprika
1 tsp celery salt
1 tsp onion salt
1/4 tsp pepper
1 tsp poultry seasoning
1/4 cup oil

Blend all ingredients with a fork. If using a shelf stable oil, you can make this ahead of time and keep it stored in your cupboard in an airtight container. I prefer to use coconut oil and make it as I need it.

To use, place spice mix in a baggie or a pie plate. Moisten meat with egg, water or milk. and shake or press, one piece at a time, till covered well. Bake or fry meat as desired.

Homemade Pumpkin Pie Spice

Here's an easy fix if you run out of pumpkin pie spice. I read it at The Common Room.

Just mix 1/4 cup of cinnamon with 4 tsp of ground ginger, 2 tsp of nutmeg, 2 tsp allspice, 1 tsp freshly ground cloves.

How simple is that?

Seasoned Salt #2

Another version of the classic.

Seasoned Salt #2

2 Tbsp salt
2 tsp sugar
1/2 tsp paprika
1/4 tsp EACH turmeric, onion powder, garlic powder, cornstarch

Blend together and store tightly covered.

Chocolate Cake Dry Mix

This is a dry mix you make ahead of time, and stir in the wet ingredients when you make it. I haven't tried it yet, but it sounds good! I found it at the excellent site "Tammy's Recipes".

Chocolate Cake Dry Mix

Combine:
2 cups flour
1 3/4 cup sugar
1 cup cocoa
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
4 Tbsp vegetable shortening, cut into above ingredients well

Store in a glass jar tightly covered.

To prepare cake:
Combine dry mix with 1 1/3 cup water
1/2 cup vegetable oil or butter
3 large eggs

Mix on low speed for 2 minutes. Pour into 2 greased and floured 9" pans (or a 9x13 or cupcake pans) and bake at 350 for 30-33 minutes (or 35-38 mins for 9x13, 19-22 minutes for cupcakes)

FuddRucker's Hamburger Seasoning Clone

Haven't tried this yet, but it sounds good!

FuddRucker's Seasoning Clone

12 tsp paprika
9 tsp pepper
7 1/2 tsp salt
3 tsp brown sugar
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp cayenne pepper

Blend and store in airtight container. Sprinkle as desired on hamburgers and even steak!

Salad Supreme

I found this on Recipezaar, the best recipe site there is.

Salad Supreme

1 1/2 tsp sesame seeds
1 tsp paprika
3/4 tsp salt
1/2 tsp EACH poppy seeds, celery seed, black pepper
1.4 tsp garlic powder
dash cayenne pepper
2 Tbsp grated Romano (or Parmesan) cheese

Combine and store in a jar in the fridge. Sprinkle on salad and enjoy!

Homemade Toothpaste

Homemade Toothpaste

2 Tbsp coconut oil
3 Tbsp baking soda
1/2 small packet of stevia, or liquid drops to taste

Mix well, then flavor with:

5 or more drops peppermint oil
OR
5 or more drops spearmint oil
OR
1 tsp cinnamon + 3-4 drops clove oil

I bought some anise oil. We are going to try that next time. I store mine in a wide mouth food container with a tiny little samplespoon I snagged from Target. I'd love to find an easier to use, more practical way to store it. Any suggestions?
