Homemade Tomato Sauce
1 onion, chopped
2 garlic cloves, chopped
1 small red bell pepper, chopped (optional)
3 Tbsp EVOO
1 ½ pounds tomatoes, skinned and chopped
Salt and pepper to taste
2 Tbsp fresh herbs: basil, parsley and marjoram
Gently fry onion, garlic and red pepper for 5 minutes. Stir in tomatoes and bring to a boil. Simmer 15-20 minutes. Stir in herbs and season with salt and pepper. May be doubled/tripled/ frozen/canned.
