Bran Flax Muffins

Bran Flax Muffins

Mix together:
3 cups whole wheat pastry flour
1 1/2 cup oat bran
1 1/2 cup flax seed meal (freshly ground, please...no rancid flax here!)
2 cups brown sugar
4 tsp baking soda
1 tsp salt
2 tsp baking powder
4 tsp cinnamon

Stir in:
3 cups grated carrots
4 cups grated apples
3 cups raisins (or cranberries)

Add:
1 1/2 cup milk
4 eggs
2 tsp vanilla

Fill greased muffin tins all the way up for big muffins, 2/3 for smaller muffins. Bake at 350 for 18-20 minutes.

This yielded 3 dozen large muffins and not one left over!
